                                                                How to make rosti
Ingredients:
1. 8 large potatoes peeled
2. one large brown onion
3. 60g butter melted
4. vegetable oil
5. 2 ripe avocados cut into wedges
6. 12 slices smoked salmon
7. 1/2 cup of creme fraiche
8. one small red onion thinly cut
9. chopped chives to serve
10.lemon wedges to serve

Method
1. Preheat oven to 100'c great potatoes place in colander and add onion

2. Use your hands to squeeze out as much excess liquid as possible. Transform the mix into a medium bowl add the melted butter and stir to combine season well with sea salt flakes and freshly ground black pepper.

3. Add enough oil to  a large non-stick pan to reach the depth of 1cm put over medium heat spoon 1/2 cup portions of potatoes into the pan use a egg lifter to flatten each portion to a 10 cm disc.

4. cook for 3-4 minutes each side or until golden brown and cooked through use egg lifter to transform to a plate lined with a paper towel place in warm oven

Then serve with all the rest of the ingredients and eat !!!!!
